Preparation steps:
1. Preheat
Preheat the oven to 175°C (fan-forced). Lightly grease and flour the tin or line it with baking paper.
2. Blanch
Whisk the eggs and sugar for 3-4 minutes until light and fluffy.
3. Add the liquid ingredients
Add the oil in a thin stream while whisking, then the yoghurt, lemon juice and zest and finally the vanilla.
4. Add the dry ingredients
Sieve the flour, baking powder and salt into a bowl and fold them in twice with a spatula, taking care not to overwork the dough.
5. Bake
Pour the mixture into the tin, smooth the surface and bake for 30 to 35 minutes (depending on your oven). Check with a toothpick: it should come out clean.
6. Leave to cool
Leave to cool for 10 minutes before removing from the tin and placing on a wire rack.
