๐Ÿ“ Strawberry-Charlotte Tiramisu style ๐Ÿ“A fresh, light and indulgent dessert.

Ingredients (6 servings)
250g mascarpone (preferably high-quality)
300g fresh strawberries (organic for a more intense flavour)
2 eggs (fresh, preferably organic or free-range)
80g caster sugar
1 sachet vanilla sugar (or 1 tsp vanilla extract)
1 packet of sponge cakes (approx. 200g)
100ml orange juice or diluted strawberry syrup to soak the biscuits
Preparing the strawberry charlotte tiramisu
Step 1: Prepare the strawberries
Wash the strawberries thoroughly under cold water and then peel them.
Cut them into small pieces, reserving a few whole strawberries for decoration. Place the sliced โ€‹โ€‹strawberries in a bowl and refrigerate.
Step 2: Prepare the mascarpone cream
Separate the egg whites from the egg yolks.
In a large bowl, beat the egg yolks with the sugar and vanilla sugar until pale and fluffy.
Add the mascarpone and mix with a whisk or spatula to obtain a smooth and even cream.
In another bowl, beat the egg whites with a pinch of salt with an electric mixer until stiff peaks form.
Gently fold the egg whites into the mascarpone cream, lifting the mixture with a spatula to maintain the airiness.
Step 3: Soak the cookies:
