Generously season both sides of the pork chops with salt and pepper.
Sear the chops for 2-3 minutes per side, until a golden-brown crust forms. This step locks in juices and adds a deeper flavor.
Step 2: Build the Slow Cooker Base
Scatter the chopped onion evenly over the bottom of your slow cooker. This creates a flavorful bed that lifts the pork chops for even heat circulation.
Step 3: Whisk the Signature Sauce
In a bowl, combine the maple syrup and Dijon mustard. Whisk until smooth and fully blended.
Step 4: Coat the Pork Chops
If you skipped searing, season the raw pork chops with salt and pepper now.
Dip each pork chop into the maple-mustard sauce, turning to coat it completely.
Step 5: Slow Cook to Tender Perfection
Place the coated pork chops on the bed of onions. Pour any remaining sauce over the top.
Cover and cook on LOW for 4-6 hours or on HIGH for 2-3 hours. The pork is done when it is tender and reaches an internal temperature of 145°F (63°C).
Step 6: Serve
For a thicker sauce, carefully transfer the liquid from the slow cooker to a saucepan. Simmer for 5-10 minutes until it reduces to your liking.
