3 to 4 medium apples (sweet variety, such as Golden or Gala)
250 g mascarpone
150 g caster sugar

Preparing the apples
Peel the apples, cut them into quarters, and remove the core and seeds. Then cut the quarters into thin slices or small cubes, according to your preference. Set aside.
Preparing the mascarpone batter
In a bowl, whisk the mascarpone with the sugar until smooth and evenly combined. Add the eggs one at a time, continuing to whisk until well incorporated. Add the vanilla extract and a pinch of salt. Then gradually add the sifted flour, followed by the melted butter. Gently mix to obtain a smooth and creamy batter.
Assembling the fondant
Preheat the oven to 180°C (350°F). Butter and flour a cake pan or springform pan. Pour half of the batter into the pan, spread the apples over the surface, then cover with the remaining batter. Lightly smooth the top with a spatula.
Baking
Bake the apple and mascarpone fondant for 35 to 40 minutes, until the surface is lightly golden and a knife inserted in the center comes out clean or with a few moist crumbs. Do not overbake to preserve the fondant inside.

Cooling and Decorating
