Preparation:
1. Preheat oven
Preheat oven to 180 °C. Prepare a round or square baking dish by lining it with baking paper.
2. Mix the wet ingredients
In a large bowl, mix the orange juice, oil, sugar and vanilla.
3. Prepare the dry ingredients
In a separate bowl, sift the flour with the baking powder and add the lemon zest.
4. Mix the mixture
Add the dry ingredients to the wet mixture. Mix gently until a smooth paste is obtained.
5. Add vinegar and boiling water
Stir in the vinegar and then the boiling water, mixing gently to form a smooth paste.
6. Bake
Pour the batter into the tin and bake for 35 to 40 minutes. Check with a toothpick: it should come out clean.
7. Glaze
Gently heat the apricot jam and brush it over the warm cake for a glossy, sweet effect.
8. Leave to cool
Leave to cool before removing from the tin and serving.
