Create the Breading Station
Step 5: Prepare three shallow pans for breading. In the first, mix the flour and paprika. In the second, beat the eggs until well blended.
Step 6: In the third pan, mix the breadcrumbs, grated Parmesan cheese, dried parsley and the meat seasoning mix. Mix well to ensure even distribution of the flavours.
Breading and frying
Step 7: Heat the cooking oil to 180°C (350°F) in a large, heavy-bottomed frying pan. The oil should be about 2 cm (¾ inch) deep.
Step 8: Working with one zucchini slice at a time, flour it first. Make sure to coat it well. Shake off any excess flour.
