Apple and yogurt pie in 5 minutes

Preheat oven to 180°C (gas mark 6) and grease a cake tin.
Arrange the diced apples on the bottom of the tin and sprinkle lightly with sugar.
Whisk the eggs and caster sugar in a bowl until foamy.
Add the yoghurt, milk, vanilla extract and lemon zest (if using) and mix well.
Pour the mixture over the apples in the tin.
Bake for about 40-45 minutes or until golden brown and set.
Let cool slightly before removing this delicious apple and yogurt pie from the pan and serving. You can enjoy it warm or cold.
