Instructions:
Prepare the batter:
Mix the dry ingredients: Mix 2.5 cups oatmeal and 1/4 teaspoon baking soda in a bowl.
Add the yogurt: Add 2 tablespoons yogurt to the dry ingredients and mix well. Mix in remaining yogurt: Add another 2 tablespoons of yogurt and mix until well combined.
Add eggs: Crack 2 eggs into bowl and mix until well combined.
Mash bananas: Mash 2 ripe bananas until smooth in a separate bowl.
Add bananas: Add mashed bananas to oatmeal mixture.
Add water: Add 100 ml of water and mix well until smooth.
Prepare pancakes:
Heat oil: Heat a small amount of oil in a non-stick frying pan over medium heat.
Pour batter: Pour a small amount of batter into the pan to form pancakes.
Fry until golden brown: Fry each pancake for about 2 to 3 minutes on each side, or until golden brown. Repeat: Repeat process with remaining batter, adding more oil to pan if needed.
