Garlic Butter Beef and Spinach Tortellini

  1. Cook the Beef: Heat the

  •  olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until it’s beautifully browned and no longer pink (about 6-8 minutes). Carefully drain off any excess fat.

  • Sauté the Aromatics: To the skillet with the beef, add the minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes (if using). Stir and cook for just 1-2 minutes until the garlic is incredibly fragrant.

  • Cook the Tortellini: While the beef is cooking, prepare the tortellini according to the package directions. Drain well and set aside.

  • Create the Sauce: Pour the beef broth into the skillet, scraping up any browned bits from the bottom. Bring it to a gentle simmer and let it cook for 2-3 minutes to reduce slightly.

  • Wilt the Spinach: Reduce the heat to medium. Stir in the

  1.  butter until it’s melted and creates a glossy sauce. Add the fresh spinach and cook, stirring, until it has wilted down and become vibrant green, about 2-3 minutes.

  2. Combine Everything: Add the cooked and drained tortellini to the skillet. Gently toss everything together until the tortellini is evenly coated in the savory garlic-butter sauce.

  3. Finish and Serve: Turn off the heat. Stir in the grated Parmesan cheese and fresh parsley, mixing until the cheese has melted into the sauce and everything is beautifully combined. Serve immediately, garnished with extra Parmesan and parsley.
