1. Prepare the dough
First, beat the eggs in a large bowl. Add the vanilla pudding powder, baking powder, a pinch of salt, sugar, cottage cheese and a splash of lemon juice. Mix everything well until a creamy mixture forms. Then add the flour and mix until a smooth dough forms. The dough should not be too thick, but not too runny either. If necessary, you can add a little flour.
2. Prepare the apples
Peel the apple and cut it into thin slices or cubes. You can also use two smaller apples, depending on your taste. Make sure the apple pieces are not too thick so that they cook through when fried.
3. Fry
Heat the clarified butter in a pan over medium heat. When the fat is hot, add the apple pieces to the batter and stir gently so that they are evenly distributed. Then carefully spread the batter and apple mixture into the pan with a spoon. Fry the apple fritters until they are golden brown on both sides. This will take about 2-3 minutes on each side, depending on the thickness of the fritters.
4. Drain and sprinkle
When the apple fritters are nicely golden brown, remove them from the pan with a slotted spoon and let them drain for a moment on kitchen paper to remove excess oil. Sprinkle some powdered sugar on top of the finished apple fritters while they are still warm. This gives them a final, sweet touch.
