🍲 Hearty Navy Bean & Ham Hock Soup

1 lb dry navy beans (about 2 cups), rinsed and picked over
- 1–2 smoked ham hocks (about 1½–2 lbs total)
1Â onion, diced
2Â carrots, diced
2Â celery stalks, diced
3 cloves garlic, minced
1Â bay leaf
1 tsp dried thyme or 2 tsp fresh
½ tsp black pepper
6–8 cups chicken broth or water (or a mix)
Salt, to taste (add at the end)
Optional: 1 tbsp apple cider vinegar for brightness
Optional: chopped parsley for garnish
