Step 5: While the zucchini is roasting, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and cook for 4 to 5 minutes, until soft and translucent.
Step 6: Add the diced red pepper to the skillet and cook for 3 to 4 minutes, until it starts to soften. Add the minced garlic and cook for another minute, until fragrant.
