✅ How to do it:
Heat the milk without boiling the cream. Beat the eggs with the sugar until they turn white and double in volume.
Add the vanilla and flour to the egg mixture and continue to whisk until all the ingredients are well combined. Pour the egg mixture into the hot milk in a thin stream and stir.
Cook the mixture over medium heat until it thickens, then cover with plastic wrap.
For the first dough, melt the margarine and mix it into the flour while kneading the dough.
For the second dough, sift 360 grams of flour into a bowl with the crème fraîche, salt and eggs, then knead the dough. Sprinkle the remaining flour on the work surface and continue kneading with your hands.
Divide the second dough into 6 equal parts and roll them out into identical round layers. Place a layer of the first dough on top of each layer, distributing it evenly over the entire surface.
