Preparing the Cake

Cream the butter and sugar together.

In a large bowl, beat the butter and sugar until creamy. With an electric mixer, this may take 3 to 5 minutes.

Add the eggs and vanilla.

Add the eggs one at a time, mixing thoroughly after each addition. Then add the vanilla extract to flavor the dough.

Mix the dry ingredients.

In another bowl, combine the flour and salt, then gradually fold this mixture into the creamy mixture.

Add the dried fruit.

Gently fold in the pistachios and cranberries. This will give the dough a beautiful color and irresistible flavor.

Shaping and Freezing

To shape the dough,

Place the dough on plastic wrap and form a tight log. Wrap it tightly and place in the freezer for at least 2 hours.

Cutting:

Once the dough is completely frozen, remove it from the freezer and let it rest at room temperature for a few minutes. This will make it easier to cut. Cut the log into circles about 1 cm thick.
