4. Assemble the dish:
In a baking dish:
Place the potato slices in the bottom.
Place the carrot sticks and sliced onion.
Pour half of the sauce over the vegetables.
Place the seasoned cod fillets (salt, pepper, a drizzle of olive oil) on top.
Pour the rest of the sauce around the fish.
5. Bake
Bake at 180°C (350°F) for 20 to 25 minutes, until the cod is golden brown and the vegetables are tender.
6. Finish and serve
Sprinkle with fresh dill (or parsley) just before serving for a touch of freshness.
