2. Assemble the puff pastry and bake
Preheat the oven to 200°C (fan oven).
Roll out the puff pastry on a baking sheet lined with parchment paper.
Spread the filling down the center of the pastry, leaving the edges free.
Cut diagonal strips from the sides of the pastry to form a braid (as shown in the picture).
Fold in the ends and braid the strips crosswise over the filling.
Brush everything with beaten egg yolk and a little water.
Bake for 25 to 30 minutes, until the pastry is golden brown and crispy.
Chef’s Tip:
You can substitute the ham with chicken breast, leftover roast meat, or a vegetarian version with spinach.
Cheese makes all the difference: Be sure to try a blend of Gruyère and Parmesan for even more character.
For an even more luxurious version, add a spoonful of crème fraîche to the filling.
