So, mix the first three ingredients together in the mixing bowl and let stand for 15 minutes.
Then stir in all the other ingredients and knead everything into a dough on speed 1 for about 5 minutes. Then let it rest, covered with a damp cloth, for another 10 minutes.
Then knead again, folding the dough over itself – top, bottom, left, and right. Always stretch the dough upwards and lengthens it nicely! Repeat this process 3 times at 10-minute intervals.
Now divide the dough into approximately 13-15 portions for small rolls and shape them into rolls. Place them on a baking sheet, brush with cornstarch slurry, and let them rise to about two-thirds of their final volume.
Score the rolls and bake on the middle rack at 230°C (450°F) for approximately 18-22 minutes. Bake with steam! Once they begin to brown slightly, reduce the temperature to 190°C (375°F).
I started the dough at 4:00 AM and they were out of the oven by 6:00 AM. Enjoy!
