Preparation:
1️⃣ Evening: In a large bowl, combine the flour, salt, sugar, yeast, water, and garlic. The mixture will be loose and sticky – that’s how it’s supposed to be. Cover with plastic wrap or a cloth and let it rest for 12-18 hours at room temperature. The dough will rise and bubble.
2️⃣ In the morning or after the rising time: Preheat the oven to 230°C (top and bottom). If you have a cast-iron pot, place it inside to heat up (or use an ovenproof dish with a lid).
3️⃣ Dust the counter with flour and carefully turn the dough out onto the counter. Do not knead – just shape it into a rough loaf. Let it rest for 30 minutes.
4️⃣ Carefully place the dough in the preheated dish (you can line it with parchment paper). Brush the top with olive oil and garlic and sprinkle with rosemary.
5️⃣ Bake for 30 minutes, covered, then uncover and bake for another 10-15 minutes, until the crust is golden brown and crispy.
6️⃣ Remove, let cool, and… serve with butter, cheese, or simply nothing – this bread speaks for itself!
