Simple sponge cake with 3 ingredients: a quick and easy dessert that is perfect for any occasion
Do this:
Whisk eggs and sugar:
In a bowl, beat eggs and sugar until it becomes a thick, light foam (at least 5–7 minutes with a hand mixer, until the volume increases 2–3 times).
Add the flour:
Gradually add the sifted flour to the egg mixture and mix gently with a spatula from the bottom up so that no lumps form and air bubbles are reduced.
Bake:
Sprinkle the greased tin with flour or line it with baking paper.
Pour the dough into the tin and bake in a preheated oven at 170 °C for about 25–30 minutes (test with a toothpick – if it comes out dry, the cake is ready).
Serve:
After it has cooled, you can sprinkle the cake with icing sugar, decorate with fruit or pour in jam.
Tip:
🔹 Fluffyness guaranteed: The eggs must be fresh and beaten until thick – that’s the key!
🔹 Variation: If you want, you can add 1 tsp of baking powder
(but it’s not necessary, the eggs are enough).
🔹 Gluten-free version: Replace the flour with a gluten-free mix.
