Instructions:
Preheat the oven to 180 °C (gas mark 6).
Beat the softened butter and sugar in a bowl.
Gradually add the eggs, mixing well between additions.
Stir in the vanilla essence and lemon zest.
Mix flour, fine semolina and baking powder in another bowl.
Gradually fold the dry mixture into the wet mixture, alternating with milk and lemon juice.
Pour the batter into a greased cake tin.
Bake for about 40 minutes, until the cake is golden brown and set in the centre.
Leave to cool and then remove from the tin.
