Preparation:
1. Beat the eggs with the sugar.
Beat the eggs and sugar with an electric whisk until light and fluffy.
2. Add the liquid ingredients.
Add the oil (or melted butter, if you prefer a traditional version) and room temperature milk. Continue whisking.
3. Mix the dry ingredients.
Add the sifted flour, baking powder and lemon zest. Stir carefully from the bottom up to avoid blowing the mixture away.
4. Pour into the mold.
Grease and flour a 22-24 cm round cake mold. Pour in the batter and smooth it out.
5. Bake
Bake in a preheated oven at 180 °C for 35-40 minutes. Test with a toothpick: if it comes out clean, the cake is ready.
6. Decorate
Once the cake has cooled, dust with icing sugar for a simple, retro touch.
