Fried cod with lemon butter sauce
Ingredients:
FOR THE COD:
• 4 cod fillets (approx. 150–200 grams each)
• Salt and pepper to taste
• ½ dl flour (for dredging)
• 2 tbsp olive oil
• 1 tbsp unsalted butter
For the lemon butter sauce:
• 3 tbsp unsalted butter
• 2 cloves garlic, finely chopped
• Juice from 1 lemon (approx. 3 tbsp)
• Zest from 1 lemon (optional, for extra tartness)
• ¼ dl chicken or vegetable broth (optional for a thinner sauce)
• 2 tbsp fresh parsley, chopped
• Salt and pepper to taste
