Cheese and spices
100 g light mozzarella cheese, diced
80 g grated cheese (parmesan or cheddar)
2 tbsp olive oil, plus extra for greasing
1 tsp salt, plus a little salt to taste
2 tbsp chopped fresh parsley
1/2 tsp black pepper, to taste
Step-by-step Instructions
Preparation time (20 minutes)
Step 1: Preheat oven to 200°C (180°C fan) / 400°F / gas mark 6. Grease a large rectangular baking dish or baking sheet with olive oil to prevent the dough from sticking.
Step 2: Prepare all vegetables by rinsing them thoroughly. Cut the broccoli into small florets. Trim the zucchini and cut into 0.5 cm slices. Peel the carrot and cut into small cubes.
