Step 12: Sprinkle the remaining mozzarella cubes and any grated cheese evenly over the vegetable mixture.
Step 13: Bake in the preheated oven for 25-30 minutes, until the top is golden brown and the center has set. The cheese should be melted and bubbling with golden spots.
Step 14: Remove from the oven and let cool for 5 minutes before cutting into squares. Garnish with the remaining fresh parsley before serving.
