Instructions:
Season the chicken fillets with salt and pepper. Dredge in flour and set aside.
Melt the butter and olive oil in a frying pan. Brown the chicken fillets and set aside.
Boil the potatoes in salted water until tender. Drain and set aside.
Heat the oil in a frying pan. Sauté the onion, bell pepper, cherry tomatoes and garlic until soft. Add the tomato sauce, water, potatoes, salt and Provencal herbs. Bring to a simmer.
Add the chicken to the sauce. Top with mozzarella cheese. Bake at 200°C for 10 minutes, or until the cheese has melted.
