• 2 onions
• 2 or 3 beets
• Vinegar
• Salt to taste
• 1 tablespoon extra virgin olive oil
After peeling the beetroot, boil them in water with a pinch of salt. Then chop them finely. Cut the onion into small pieces and add them to the chopped beetroot. Pour in the olive oil and vinegar and season with salt. You can let this delicious salad rest for an hour before enjoying it.
