Instructions:
Prepare the potatoes:
Preheat oven to 425°F (220°C).
Wash and dry the potatoes thoroughly.
Make shallow cross-cuts (about ¼ inch deep) on each potato with a sharp knife.
Season the potatoes:
Mix the olive oil, salt, black pepper, garlic powder, and rosemary in a small bowl.
Place the potatoes on a baking sheet and brush the oil mixture generously over each potato, making sure to get into the cuts.
Bake to perfection:
Roast for 35–40 minutes, or until the potatoes are golden brown, crispy on the outside, and tender on the inside.
Let cool slightly before serving.
