Step 2: Frying the Zucchini
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Arrange the zucchini slices in a single layer. Fry for 2-3 minutes on each side, until golden brown and tender. Fry in batches if necessary.
Tip: Don’t move the zucchini while frying – this will result in a better, crispier crust.
Step 3: Adding the Cheese
Reduce the heat. Sprinkle the zucchini evenly with the mozzarella and Parmesan mixture.
Cover the pan with a lid and cook for another 1-2 minutes, until the cheese melts and begins to bubble.
Tip: For even better results, place the pan under the broiler in the oven for 1 minute (if it’s oven-safe).
Step 4: Serving
Transfer the zucchini to a plate.
Sprinkle with fresh parsley. Serve immediately – warm, while the cheese is still melted and delicious.
