Assembly and Baking
Preheat the oven to 180°C (350°F). Place the prepared zucchini in a baking dish and carefully fill the slices with the vegetable and egg mixture. Evenly distribute the cooked onion over and between the zucchini cuts.
Brush the prepared balsamic glaze all over the surface, making sure it seeps into all the slices. Sprinkle the grated cheese over the top, letting it fall into the crevices.
Bake for 25 minutes, until the zucchini is tender when pierced with a fork and the cheese is golden brown and bubbly. The vegetables should be cooked through but still have some texture.
Finishing
Remove from the oven and let cool for 5 minutes. Garnish generously with fresh parsley and dill before serving. The chilling period allows the flavors to meld and makes the dish easier to cut and serve.
