Lay a cabbage leaf flat. Place 2–3 tablespoons of filling in the center.
Fold the sides over and roll tightly like a burrito.
Repeat with the remaining leaves and filling.
5️⃣ Prepare the vegetable bed
Mix the carrots, zucchini, peppers and onions with olive oil and spices.
Spread evenly over the bottom of your baking dish.
6️⃣ Assemble and bake
Place the cabbage rolls on top of the vegetable bed.
Whisk together all the sauce ingredients in a bowl.
Pour the sauce evenly over the rolls and vegetables.
Cover tightly with foil and bake for 45–50 minutes.
Remove the foil and bake for another 10–15 minutes, until the rolls are soft and the sauce is bubbling.
7️⃣ Serve and enjoy
Let cool slightly before serving.
Spoon roasted vegetables and sauce next to each roll.
Serve with crusty bread or a fresh salad for a complete meal.
