1. Preheat the oven to 180 degrees (top/bottom heat). Then line a baking tray with baking paper.

Grate the apples finely. If they are very juicy, gently press the grated mixture.

2. Then mix the grated apples, rolled oats, egg, cinnamon, baking powder and honey/maple syrup in a large bowl until a workable mixture is formed.
3. Now shape the cookies: Shape small cookies with your hands (approx. 5 cm in diameter) and place them on the baking paper.
4. Then bake the cookies in the preheated oven for 15-20 minutes until golden brown. Remove from the oven and let cool completely, enjoy! Perfect for a healthy snack or to-go!
