- In a bowl, combine the grated cheddar cheese, softened cream cheese, mayonnaise, chopped pimentos, garlic powder, salt, and pepper. For an extra kick, add a dash of hot sauce or cayenne pepper.
- Spread a thin layer of room temperature butter on one side of each bread slice.
- Place four slices of bread, butter-side down, on a clean surface. Generously spread the prepared pimento cheese mixture on the unbuttered side.
- Top each with the remaining bread slices, butter-side facing up.
- Heat a large skillet or griddle over medium heat. Carefully add the sandwiches and cook for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey.
