Whether you’re starting your morning with a hearty breakfast or enjoying them as a treat at any time of day, these pancakes are the perfect base for any kind of topping.
Whether you prefer chocolate and hazelnut butter, honey, jam or a pinch of sugar, these fluffy pancakes will melt in your mouth. Whisk together the flour, sugar, baking powder, bicarbonate of soda and salt in a medium bowl.
These ingredients will form the base of your pancakes and ensure they rise perfectly, giving you a fluffy and airy result every time. Whisk together the eggs, buttermilk and vanilla extract in another bowl until everything is mixed.
Buttermilk helps give the pancakes their soft, fluffy texture. If you don’t have buttermilk, don’t worry – you can easily make your own by adding 1 tablespoon of vinegar to regular milk and letting it sit for 5 minutes.
Pour the wet ingredients into the bowl with the dry ingredients.
Stir gently until the batter just comes together. Avoid overmixing, as this can make the pancakes tough. A few lumps are okay – they will disappear as the pancakes cook.
Whisk in the melted butter to make the batter smooth and extra light. The butter will also help the pancakes cook evenly and give them a nice golden brown color. Heat a non-stick frying pan or griddle over medium heat and lightly grease it with butter or oil.
