It’s a simple, hearty and enjoyable dish that we love to make any time of year. Perfect for a quick dinner, weekend brunch or even an appetizer at a holiday meal. And the best part? It’s delicious both hot and cold, served with a green salad or creamy vegetable soup.
Ingredients for four people:
Filling:
2 tablespoons 1 tablespoon olive oil.
1 small onion or 1 shallot, finely chopped
500g mushrooms, cleaned and sliced
150g diced smoked ham (or smoked bacon)
2 tbsp butter
2 tbsp flour
360ml warm milk (whole or semi-skimmed)
50g grated cheese (Emmental, Comt XXL, Gruy XXL or Parmesan)
2 tbsp chopped fresh parsley
Salt and freshly ground black pepper
Pinch of nutmeg (optional)

1 egg yolk + 1 tsp water for greasing
