Ingredients

  • 2 large bunches collard greens
  • 2 smoked ham hocks
  • 1 medium onion, chopped

  • 6 cups water or chicken broth
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar (optional, to balance bitterness)

Directions

  1. Wash collard greens thoroughly to remove grit.
  2. Remove thick stems and chop leaves into bite-size pieces.
  3. In a large pot, add ham hocks, water or broth, onion, and garlic.
  4. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for 1 hour to develop a rich, smoky broth.
  6. Add collard greens, salt, black pepper, and red pepper flakes.
  7. Stir well, cover, and simmer for another 45–60 minutes, stirring occasionally.
  8. Stir in apple cider vinegar and sugar if using.
  9. Taste and adjust seasoning.
  10. Remove ham hocks, shred meat, and return meat to the pot (optional).
  11. Serve hot with some pot liquor spooned over the greens.
