Preparing the strawberry mixture
Start by washing and hulling the fresh strawberries. Slice them into thin slices and place them in a medium bowl. Add a tablespoon of caster sugar and a tablespoon of fresh lemon juice to the sliced ​​strawberries. Gently toss the strawberries with the sugar and lemon juice, making sure all the pieces are well coated. Let stand for 10 to 15 minutes to allow the strawberries to release their natural juices and form a light syrup.
Prepare the Cream Layer
Put the heavy whipping cream in a large bowl and beat with an electric mixer on medium speed. Gradually increase the speed until soft peaks form. Add the sweetened condensed milk, vanilla extract, and remaining tablespoon of sugar. Continue beating until stiff peaks form, being careful not to overbeat and form butter.
In a separate bowl, gently fold the room temperature mascarpone cheese until smooth and creamy. Gently fold the whipped cream into the mascarpone in three batches, using a gentle folding motion to maintain a light and airy consistency.
