Preparation:
Warm Preheat oven to 175°C.
Line a loaf pan with parchment paper and set aside.
Filling/Topping:
Mix brown sugar, ground cinnamon and nutmeg (if using) in a small bowl. Set aside.
Cake batter:
Mix powdered sugar, melted
butter, sour cream, eggs, milk and vanilla extract in a large bowl. Mix until smooth.
Whisk together flour, baking powder, bicarbonate of soda and salt in a separate bowl.
Gradually add dry ingredients to wet mixture and stir until just combined. Avoid overmixing.
Stir in apples:
Stir in chopped apples, reserving a small handful for topping.
Assemble the bread:
Pour half of the batter into the prepared loaf pan and smooth into an even layer.
Sprinkle half of the cinnamon and sugar mixture over the batter.
Use a butter knife to gently swirl the cinnamon and sugar mixture into the batter.
Repeat with the remaining batter and cinnamon and sugar mixture, and top with the reserved apple pieces.
Carefully turn the top layer with the knife.
