Prepare the zucchini:
Slice the zucchini and place in a bowl.
Sprinkle with salt and let stand for a few minutes to release excess liquid. Squeeze the liquid from the grated zucchini using a clean kitchen towel or cheesecloth.
Prepare the breading:
Mix the breadcrumbs and flour in a bowl.
Whisk the eggs in another bowl and stir in the grated Parmesan cheese, marjoram and paprika.
Fry the zucchini:
Roll the grated zucchini in the flour and breadcrumb mixture.
Then dip the zucchini in the egg and cheese mixture, making sure it is well coated.
Fry the zucchini:
Heat the olive oil in a frying pan over medium heat.
Fry the breaded zucchini for 4 to 5 minutes on one side until golden brown.
Turn the zucchini and fry over low heat for another 5 minutes until fully cooked and crispy. Serving:
Remove the zucchini from the pan and place on paper towels to drain any excess oil.
Serve hot and enjoy!
