1️⃣ Activate the yeast
In a large bowl, combine the warm water, sugar, and instant yeast. Stir gently and let stand for 5-10 minutes until the mixture becomes foamy. This indicates that the yeast is active and ready to work its magic. (Tip: Make sure the water is warm, not hot, to avoid killing the yeast.)
2️⃣ Mix the dough
Add the flour and salt to the yeast mixture. Stir with a spoon or spatula until well combined. The dough will be sticky – this is completely normal! (No kneading is necessary! The dough will develop gluten naturally as it rises.)
3️⃣ First rise
Cover the bowl with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 hour, or until it has doubled in size. Ideal rising locations include a warm kitchen counter, near a sunny window, or inside your oven with the light on (make sure the oven is off).
4️⃣ Shaping and second rise
Once the dough has doubled in size, lightly grease a 9×5 inch loaf pan with oil or non-stick spray. Pour the dough into the tin and smooth the top gently. Let it rise again for 30 minutes until it puffs up slightly above the edges of the tin.
