Ingredients for 4 servings
For the filling:
2 tbsp. 1 tbsp olive oil
1 small onion or 1 shallot, finely chopped
500g mushrooms, trimmed and sliced
150g smoked ham (or smoked bacon), diced
2 tbsp butter
2 tbsp flour
360ml warm milk (whole or semi-skimmed)
50g grated cheese (Emmental, Comté, Gruyère, or Parmesan)
2 tbsp chopped fresh parsley
Salt and freshly ground black pepper
A pinch of nutmeg (optional)
