Puff pastry with mushrooms and ham: Crispy, creamy and irresistible

1 roll of puff pastry (300-350g)

1 egg yolk + 1 tsp water for brushing

Preparation:

1. Prepare the filling
Heat olive oil in a large pan over medium heat. Sauté the onion or shallot until translucent.

Add the mushrooms and fry until the water has completely evaporated. Lightly season with salt.

Stir in the ham and fry for a few minutes.

Add the butter and sprinkle over the flour. Stir until the ingredients are well coated.

Gradually add the hot milk, stirring constantly, until a smooth sauce forms.

Remove from the heat and stir in the grated cheese, parsley, pepper, and a pinch of nutmeg, if desired.

Let the filling cool before assembling.
