Instructions:
Preheat oven and prepare potatoes: Preheat oven to 180°C (355°F). In a large bowl, toss the potato slices with olive oil, salt, pepper, a pinch of oregano and paprika. Make sure they are evenly coated.
Brown the onion and fry the meat: Heat a drizzle of olive oil in a large frying pan over medium heat. Fry the chopped onion until soft and translucent. Add the ground beef of your choice, season with salt, pepper and paprika and fry until golden brown and crumbled. Stir in the tomato sauce and simmer for a minute or two, then remove from the heat.
Layer! Spread half of the seasoned potatoes in an even layer in a baking dish. Top with half of the meat mixture and half of the mozzarella cheese. Repeat the layers with the remaining potatoes, meat mixture and mozzarella cheese. Finally, sprinkle with grated Parmesan cheese. Prepare the creamy egg mixture: Whisk together the eggs, milk, flour, sour cream and a pinch of salt in a medium bowl. Make sure it is smooth and creamy.
Bake until golden brown: Pour the egg mixture evenly over the layered ingredients in your baking dish. Bake in the preheated oven for about 40 minutes, or until the top is golden brown and bubbling, and the potatoes are tender when pierced with a fork.
Serve and enjoy! Let the dish cool slightly before serving so that the layers firm up for easier slicing and plating.
