1. Prepare the eggs
Crack the eggs into a bowl and whisk until well combined and slightly foamy.
Stir in the milk (or cream) and season with salt and pepper.
2. Heat the pan
Use a nonstick skillet over medium-low heat.
Melt the butter or heat the oil to coat the pan evenly.
3. Fry slowly
Pour in the egg mixture and let it sit for 20-30 seconds until the edges set.
Gently press the cooked edges towards the center with a spatula and let the uncooked eggs run out to the edges.
4. Form soft curds
Continue to fold gently until soft, creamy curds form.
Remove from heat while still slightly runny – they will finish cooking off the stove.
