Step 1: Preheat and prepare
Preheat oven to 350°F (175°C). Grease a round or square cake pan and line it with parchment paper for easy removal.
Step 2: Mix dry ingredients
In a large bowl, sift together:
• Flour
• Baking powder
• Bicarbonate of soda
• Salt
Whisk together to ensure they are evenly mixed. This step ensures a light and airy texture for the finished cake.
Step 3: Whisk together wet ingredients
In a separate bowl, mix together:
• Sugar
• Eggs
Whisk the mixture for about 2-3 minutes until light and slightly foamy. Then add:
• Milk
• Oil (or melted butter)
• Vanilla extract
Mix well until the mixture is smooth and combined.
Step 4: Mix the wet and dry ingredients
Gradually add the wet mixture to the dry ingredients and gently fold in with a spatula or whisk. Be careful not to overmix – stop as soon as there are no visible flour streaks. Overmixing can result in a dense cake.
